Masala Bharre Karele Recipe ek behtareen aur shahi recipe hai jo aam karelon se bilkul mukhtalif hai. Isme imli (tamarind) ka twist diya jata hai jo karele ki karwahat (bitterness) ko khatam karke ek lazeez tangy flavor deta hai. Ye recipe khala (aunt) ki signature specialty hai.

  • Bitter gourd : 1 kg
  • oil half kg
  • flour 4 tablespoons
  • Tamarind pulp : 4 tablespoons
  • Onion : 1 kg
  • Salt: 2 tablespoons
  • Red chili powder: 2 teaspoons
  • Dry coriander powder 2 tablespoons
  • Garam masala powder: ½ tea

  1. First, wash and set all the vegetables including the bitter gourds (karele) together on a tray, and then start cooking the Masala Bharre Karele

  2. Prepare the Masala: First, grind the onions. Once they are ground, add salt, red chili powder, coriander powder, tamarind pulp, gram flour (besan), and oil, then cook the mixture.

  3. Cool & Divide: Once the masala is fully cooked, transfer it onto a tray to let it cool down completely. After it cools, divide the masala into two equal halves

  4. Prepare the Bitter Gourds (Karele): Peel the bitter gourds, keeping the peels and the karela bodies separate. Rub salt on both, wash them thoroughly, and then dry them completely.
