Ras Malai ek bohat hi popular aur delicious Pakistani aur Indian dessert hai jo apni soft texture aur creamy taste ki wajah se har kisi ko pasand aata hai. Yeh khas tor par Eid, weddings aur special occasions par serve kiya jata hai. Is dessert ka naam hi iska taste describe karta hai—“Ras” yani meetha doodh aur “Malai” yani creamy texture.

Ras Malai asal mein soft paneer (chena) ke balls hote hain jo meethay doodh (rabri) mein soak kiye jate hain. Jab yeh balls doodh ko absorb kar lete hain to yeh aur bhi zyada soft aur juicy ho jate hain. Iska taste mild sweet, creamy aur thoda sa fragrant hota hai jo ise ek perfect dessert banata hai.

Ras Malai banane ka process do main parts par mushtamil hota hai. Pehla part hai rasgulla balls banana aur doosra part hai milk (ras) prepare karna. Rasgulla balls banane ke liye doodh ko phaad kar chena banaya jata hai. Is chena ko achi tarah knead karke smooth dough banaya jata hai aur phir chhote balls bana kar sugar syrup mein boil kiya jata hai.

Jab yeh balls syrup mein cook hote hain to yeh phool kar double size ke ho jate hain aur bohat hi soft ban jate hain. Yeh step bohat important hai kyunki agar balls hard reh gaye to Ras Malai ka taste perfect nahi aayega.

Doosri taraf doodh ko slow flame par pakaya jata hai jab tak woh thoda thick na ho jaye. Is doodh mein sugar, elaichi powder aur kabhi kabhi kesar (saffron) add kiya jata hai jo isay ek rich flavor deta hai. Kuch log is mein dry fruits jaise badam aur pista bhi add karte hain jo taste aur presentation dono ko enhance karte hain.

Jab rasgulla balls tayar ho jate hain to unhein halka sa press karke extra syrup nikal diya jata hai aur phir unhein prepared milk mein daal diya jata hai. Yeh balls doodh ko absorb kar lete hain aur Ras Malai ready ho jati hai.

Serving ke liye Ras Malai ko thanda karna bohat zaroori hai. Jab yeh fridge mein kuch ghanton ke liye chill ho jati hai to iska taste aur bhi zyada delicious ho jata hai. Isay chilled serve kiya jata hai aur upar se pista, badam aur kesar se garnish kiya jata hai.

🥣 Ingredients

Rasgulla Balls:

  • 1 liter doodh
  • 2 tbsp lemon juice ya sirka
  • 1 cup cheeni
  • 4 cup pani

Milk (Ras):

  • 1 liter doodh
  • ½ cup cheeni
  • ½ tsp elaichi powder
  • 8–10 pista (sliced)
  • 8–10 badam (sliced)
  • Kesar (optional)

👩‍🍳 Method

1. Chena Banayein

Doodh ko ubal kar lemon juice add karein. Jab doodh phat jaye to chena alag kar lein aur wash karein.

2. Balls Banayein

Chena ko achi tarah knead karke smooth karein aur chhote balls bana lein.

3. Syrup Mein Cook Karein

Pani aur cheeni ka syrup banayein aur balls ko 10–15 minutes boil karein.

4. Milk Prepare Karein

Doodh ko cook karke thoda thick karein. Cheeni, elaichi aur dry fruits add karein.

5. Assemble Karein

Rasgulla balls ko halka press karke milk mein daal dein.

6. Chill Karein

Fridge mein 2–3 ghante rakh kar thanda serve karein 😋
