Instructions
1: Marinating the Chicken
- First, wash the boneless chicken thoroughly, cut it into small cubes, and drain excess water.
- In a bowl, add the chicken along with yogurt, ginger-garlic paste, lemon juice, tikka boti masala, red chili powder, and salt to taste.
- Mix everything well so the masala coats the chicken evenly. Let it marinate for at least 30 minutes to 1 hour.
Step 2: Cooking Tikka Boti
- Heat 2 tbsp of cooking oil in a pan or karhai over medium heat.
- Add the marinated chicken and cook until the water dries up and the chicken is tender and fully cooked.
- Coal Smoke (Barbecue Flavor): To give it a restaurant-style smoky flavor, place a small foil bowl in the center of the chicken, put a glowing piece of charcoal on it, add a few drops of oil or butter, and cover the pan tightly for 2–3 minutes.
Step 3: Preparing the Vegetables
- In a separate pan, heat 2 tablespoons of cooking oil, add chopped garlic, and sauté lightly.
- Add sliced onions, mixed vegetables (carrots, peas, capsicum), and chopped tomatoes.
- Toss in soy sauce, black pepper powder, and salt to taste. Stir-fry on high flame for a short time so the vegetables retain their fresh crunch.
Step 4: Boiling the Rice
- Soak the Basmati rice in water for 30 minutes.
- Boil water in a large pot, add whole spices (cloves, black cardamom, bay leaves) and salt.
- Add the soaked rice and boil until it is about 90% cooked, then drain the water completely.
Step 5: Final Serving
- Spread the boiled rice evenly on a large serving platter.
- Top the rice with the prepared juicy mixed vegetables and flavorful chicken tikka boti.
- Serve hot and enjoy!
Pro tips
Chicken Marination Time: Marinate the chicken for at least 1 to 2 hours. If you have time, keeping it in the fridge overnight makes the chicken juicy and flavor-packed.
Charcoal Smoke : Do not skip the charcoal smoke step to get that authentic barbecue flavor. It gives the dish a wonderful dhaba or restaurant-style aroma.
Crunchy Vegetables: Do not overcook the vegetables. Stir-fry them quickly on a high flame so they retain their bright color and fresh crunch.
Perfect Boiled Rice: Add a splash of vinegar or 1 teaspoon of oil to the boiling water while cooking the rice. This keeps the grains separate and fluffy instead of sticky.
Layering & Presentation: When serving, lay down a base of plain or lightly spiced boiled rice, top it with the colourful vegetables, and place the juicy tikka boti right in the center. This combination looks stunning and appetizing!
