Easy Kachori Recipe – Crispy & Khasta Style



📝 Ingredients
🥣 Dough (Aata)
- 2 cups maida
- 3 tbsp oil ya ghee
- ½ tsp namak
- Paani (zarurat ke mutabiq)
🌶 Filling
- 1 cup moong dal (2 ghante bhigo kar pani nikal dein)
- 1 tsp zeera
- 1 tsp crushed dhania
- ½ tsp lal mirch powder
- ½ tsp haldi
- 1 tsp garam masala
- 1 tsp saunf (optional)
- Namak taste ke mutabiq
- 1 tbsp oil
👩🍳 Method
Step 1: Dough tayar karein
- Maida, namak aur oil mix karein.
- Haath se rub karein jab tak crumb jaisa texture na ho jaye.
- Thora thora pani daal kar soft dough bana lein.
- Cover karke 20 minutes rest karne dein.
Step 2: Filling banayein
- Pan me oil garam karein.
- Zeera aur saunf daal kar halka sa fry karein.
- Bhigi hui dal daal dein.
- Saare masalay add karein.
- 5–7 minutes tak medium flame par cook karein jab tak mixture dry na ho jaye.
- Thanda hone dein.
Step 3: Kachori shape karein
- Dough ki small balls bana lein.
- Har ball ko halka sa bel kar beech me filling rakhein.
- Achhi tarah seal karein aur halka sa flatten kar dein.
Step 4: Fry karein
- Oil ko medium-low heat par garam karein.
- Kachori ko halki aanch par fry karein.
- Golden brown hone tak slow fry karein (8–10 minutes).
💡 Tip: Tez aanch par fry karne se kachori crispy nahi banegi.
