📝 Ingredients:

For Bhallay:

  • 1 cup maash ki daal (urad dal, soaked 4–5 hours)
  • 1 tsp salt
  • ½ tsp red chili powder
  • 1 tsp cumin seeds (zeera)
  • Oil for frying

For Dahi Mixture:

  • 2 cups fresh yogurt (dahi)
  • 2 tbsp sugar (optional, taste ke mutabiq)
  • ½ tsp salt

Toppings:

  • Imli ki meethi chutney
  • Green chutney
  • Chaat masala
  • Lal mirch powder
  • Roasted cumin powder
  • Fresh coriander (optional)

👩‍🍳 Method:

Step 1: Bhalla Batter

  1. Soaked daal ka pani nikaal kar blender mein smooth paste bana lein.
  2. Is paste ko 5–7 minutes tak achi tarah whisk karein taake batter fluffy ho jaye.
  3. Namak, lal mirch aur zeera mix kar dein.

Step 2: Frying

  1. Karahi mein oil medium heat par garam karein.
  2. Haath ya spoon ki madad se chhote chhote bhallay oil mein daal dein.
  3. Golden brown hone tak fry karein.

Step 3: Soaking

  1. Garam bhallay ko turant halkay garam pani mein 10–15 minutes ke liye soak kar dein.
  2. Phir nikal kar halkay se press karein taake extra pani nikal jaye.

Step 4: Dahi Topping

  1. Dahi ko smooth whisk karein, us mein sugar aur namak mix karein.
  2. Bhallay plate mein rakh kar upar se dahi daal dein.
  3. Imli chutney, green chutney, chaat masala aur lal mirch sprinkle karein.

💡 Pro Tips:

✔ Batter jitna zyada fluffy ho ga, bhallay utne soft banenge.
✔ Agar bhallay hard lagain tou thora sa baking soda (1 pinch) batter mein daal sakte hain.
✔ Serve karne se 30 minutes pehle fridge mein rakh dein – taste double ho jata hai 😍
